RECIPE OF THE MONTH - SEPTEMBER

​Marshmallow and Toffee Apple Kebab

​Halloween and Bonfire Night and their chilly temperatures are fast approaching, why don't you try warming yourself up with one of these sweet treats?

Ingredients - Marshmallow - (Easy Version!) 

  1. Buy a bag of Marshmallows

Ingredients - Marshmallow - (Harder Version!)  

  • 450g of caster sugar 
  • 1 tbsp of liquid glucose 
  • 200ml of water 
  • 1 vanilla pod 
  • 9 gelatine leaves 
  • 2 egg whites 
  • Cornflour for dusting 
  • Icing sugar for dusting 
  • 1 tsp olive oil

Method for making the marshmallows 

  1. Grease a shallow baking dish with olive oil, lightly dust with the cornflour and icing sugar 
  2. Place the glucose, sugar and water in a medium, heavy-bottomed saucepan and slowly bring to the boil. using a sugar thermometer heat the mixture until it reaches 127c. 
  3. When the mixture has reached the correct temperature add the vanilla and relating leaves. 
  4. Put the egg whites into a dry clean bowl and whisk until you have stiff peaks. 
  5. Pour the sugar mix into the egg whites whilst whisking slowly, the mixture should become glossy and thick. 
  6. Carry on whisking for a further 5 minutes until the mixture can form stiff peaks. 
  7. Pour the marshmallow mixture into the prepared baking dish and set aside to set - this will take at least an hour. 
  8. When the marshmallow has set completely, sprinkle a chopping board with icing sugar and cornflour and turn the marshmallow onto it. 
  9. Using a hot knife, cut the sheet into neat 2cm cubes .

Ingredients - Toffee Apple - (Easy Version!) 

  • 3 Apples - Granny Smith's work well due to their lovely crunch 
  • 100g dairy toffees bought from the shop 
  • 10ml milk

Ingredients - Toffee Apple - (Harder Version!) 

  • 3 Apples - Granny Smith's work well due to their lovely crunch 
  • 4 sprigs of fresh thyme (optional) 
  • 50g of sugar 
  • 50g of butter

Method for making the toffee apples - (Easy Version!) 

  1. Peel the apples. 
  2. Use a Melon Baller to create apple balls. 
  3. Alternatively use a 2.5cm pastry cutter to create balls from slices, round the edges with a knife. 
  4. Take the toffees out of their wrappers and place in a microwavable bowl with the milk and heat for 5 - 8 mins until melted. 
  5. Skewer the apple pieces and carefully dip into the toffee mixture, rolling around to coat. 6 Place in the fridge to harden.

Method for making the toffee apples - (Harder Version!) 

  1. Preheat the oven to 180c. 
  2. Peel the apples. 
  3. Use a Melon Baller to create apple balls. 
  4. Alternatively use a 2.5cm pastry cutter to create balls from slices, round the edges with a knife. 
  5. Add the sugar, butter and thyme to a frying pan and place over a medium heat. 
  6. Cook until the sugar has dissolved into the butter, then turn up the heat and cook to a toffee consistency . 
  7. Skewer the apple pieces and carefully dip into the toffee mixture, rolling around to coat. 
  8. Place on a lined baking tray and bake for 8 - 10 minutes in the oven, set aside to cool .

Assembling the Marshmallow and Toffee Kebabs 

  1. When ready, skewer each marshmallow cube or store bought marshmallow then thread a toffee apple piece on top. 
  2. Lightly caramelise the outside of the marshmallow with a blowtorch and ENJOY!
